I have made a big pot of soup for tonight’s dinner. I started two days ago by cooking a roast in the crock pot, then shredding the beef. Today I chopped a large bowlful of vegetables: potatoes, carrots, onions, garlic, cabbage, green beans. I heated olive oil in a large stock pot and then sauteed the onions and garlic. I then added the chopped vegetables along with some uncooked brown rice, then added tomatoes and beef broth. After that simmered for an hour, I added the shredded roast and juice. That is still simmering and I have a loaf of whole-wheat bread in the oven.
Tom purchased this Smoking Loon Cabernet Sauvignon 2006 at our local grocery store (Polly’s Country Market) for under $10. This is a modest, but lovely, red wine. The color is dark garnet. I note black cherries with a touch of cloves on the nose. On the palate is an interesting blend of dill, blackerberries, and pepper. The finish has a touch of carmel and pepper. This wine is helping us celebrate another fun weekend together and I know it will be a delicious accompaniment to our wine. Happy Sunday night everyone!
